In the kitchen

Ein Zweig zu Ofenkartoffeln, Lamm oder auf die Focaccia: in der Mittelmeerküche ist er bis heute ein Klassiker.

Dried rosemary leaves (Rosmarinus officinalis), whole or coarsely crumbled, for cooking and tea.

At a glance

  • Plant: Rosmarinus officinalis (rosemary), mint family
  • Origin: Mediterranean region, now also from German cultivation
  • Includes: essential oil with cineole and camphor, rosmarinic acid, bitter substances
  • Tradition: Mediterranean cuisine since antiquity; in the Middle Ages, a wedding and memorial herb.
Why your body is aware of this issue: The scent of rosemary immediately awakens something within you: cineole and camphor are powerful, volatile aromatic compounds. In the Middle Ages, rosemary sprigs were worn as a token of remembrance; today, it is an indispensable ingredient in Mediterranean cuisine.

Here's how to use it

In the kitchen, use it with potatoes, lamb, roasted vegetables, and in bread. For tea, pour 250 ml of hot water over one teaspoon and let it steep for 10 minutes. Dried, it is more intense than fresh, so use sparingly. Stored in a dark, dry place, it will keep for one year.

Good to know

  • Those prone to high blood pressure should stick to kitchen portion sizes.
  • During pregnancy, use only as a spice, not as a tea in larger quantities.
  • The essential oil is not the same as the dried herb: never use the oil internally.

As always, remember: a spice or herb is part of good food, not a medicine or medical advice. If you have any health concerns, are pregnant or breastfeeding, or are taking regular medication, it's a good idea to consult your doctor beforehand.
